| BAKED HALIBUT RECIPE
Baked Halibut (Serves 4)
4 halibut fillets
1 sliced onion
4 tbsp chopped parsley
450g tomato juice
salt and freshly ground black pepper
Put the halibut fish in a greased baking dish.
Arrange the onion slices on top and sprinkle with half the parsley.
Pour on the tomato juice, season well and cover with a large sheet of aluminium foil.
Bake in a preheated moderately hot oven (200C, 400F, Gas Mark 6) for 30 minutes. or until the fish is cooked.
Sprinkle with the remaining parsley and serve hot.
