Cod in Tomato Sauce
Cod in Tomato Sauce (Serves 4)
Ingredients:
4 cod steaks, fresh or frozen
4 tbsp olive oil
450g tomatoes, skinned and chopped
1 clove garlic, crushed
1 tbsp chopped parsley
4 tbsp dry white wine
salt and freshly ground black pepper
Method:
First make the tomato sauce by heating the oil in a pan, adding tomatoes, garlic, parsley, wine and seasoning.
Simmer for about 10 mins, stirring occasionally.
Pour half the sauce into a shallow casserole dish, lay the fish on top and cover with the remaining sauce.
Cover and cook in a preheated moderately hot oven (190C, 375F, Gas Mark 5) for 20 to 25 mins until cooked.
Turn on to a warmed dish and serve immediately.
