| COURGETTES SOUP RECIPE |
Stuffed Eggs
Courgettes soup (Serves 4-6)
Ingredients:
800g courgettes
2 medium sized potatoes
1 carrot
1 onion
1 chicken cube
200g low-fat cheese (grated)
a little skimmed milk.
Method:
Chop vegetables into cubes and fry lightly.
Add enough water to cover, add chicken cube and let it simmer till done.
Add cheese and simmer for a few more minutes.
Place in liquidiser and process for 10 seconds or so till soup in smooth.
When serving, drizzle some milk on top.
