Crunchy Salad
Crunchy Salad (Serves 4)
Ingredients:
225g green pepper, deseeded and chopped
225g finely chopped fennel
225g roughly chopped celery
1 cucumber, peeled and diced
100g chopped spring onions
1 - 2 tbsp chopped tarragon
6 tbsp lemon vinaigrette dressing
Method:
Blanch the green pepper in boiling water for 1 minute and drain.
Mix the pepper, fennel, celery, cucumber and spring onions together in a salad bowl and sprinkle with the tarragon.
Serve with lemon vinaigrette dressing.
