Fish in Parcels
Fish in Parcels
(Serves 4)
Ingredients:
4 cutlets or portions of white fish
lemon juice
some dried tarragon or soy sauce
salt and pepper
Method:
Cut four equal squares of foil large enough to enclose a cutlet and grease with olive oil. Put the fish on the foil, sprinkle with lemon juice, soy sauce or tarragon, salt and pepper. Wrap the foil around the fish tightly.
Poach the fish parcels in a shallow pan of hot water for around 25 mins. Serve in the parcels with boiled potatoes and a green salad.
