| HOT POTATO SALAD RECIPE |
Hot Potato Salad
Hot Potato Salad (Serves 4)
Ingredients:
750g new waxy potatoes, scrubbed
2 tbsp finely chopped onions
3 tbsp olive oil
1 tbsp white wine vinegar
salt and freshly ground black pepper
4 tbsp snipped chives
Method:
Cook the potatoes in their jackets in boiling salted water until tender.
Drain well and cut into thick slices.
Stir in the chopped onion.
Pour over the oil and vinegar, and mix carefully trying not to break up the potatoes.
Season with salt and pepper and stir in 3 tbsp of the chives.
Turn the salad into a serving dish and sprinkle the remaining chives on top.
