| LENTIL STEW RECIPE |
Lentil Stew
Lentil Stew (Serves 4)
Ingredients:
3 tbsp olive oil
2 chopped onions
1 crushed garlic clove
4 carrots, sliced
4 celery stalks, sliced
450g tomatoes
1 bay leaf
300ml tomato juice
900ml water
300g red lentils
2tbsp chopped parsley
salt and freshly ground black pepper
chopped parsley to garnish
Method:
Head the oil in a large pan, add the onions, garlic, carrots and celery and fry for 10 minutes.
Skin the tomatoes and cut into quarters. Add to the pan with the remaining ingredients.
Season with salt and pepper to taste.
Cover and simmer for about 1 hour, stirring occasionally until the lentils are tender.
Sprinkle with chopped parsley.
Serve with crusty wholemeal bread.
