| PASTA WITH AVOCADO RECIPE |
Pasta with Avocado
Pasta with Avocado (Serves 2)
Ingredients:
225g small pasta shells
3 tblsp olive oil
1 tbsp vinegar
1 large avocado
juice and grated rind of l lemon
1 clove garlic, minced
3 - 4 tbsp milk
4 onion, chopped
1 tbsp chopped parsley
Method:
Cook the pasta shells and drain.
Mix well the oil, vinegar and some salt and freshly ground pepper.
Pour over the pasta and mix well.
Split the avocado, remove the pulp and mash well with the juice and rind of the lemon, garlic and milk.
Add the onion and parsley.
Add this mixture to the pasta and stir well.
Serve cold.
