| PORK WITH ORANGE RECIPE |
Pork with Orange
Pork with Orange (Serves 4)
Ingredients:
4 pork fillets of 100g each, trimmed of fat
300ml unsweetened orange juice
12 -20 juniper berries
salt and freshly ground black pepper
Method:
Place the fillets in a dish and pour orange juice over.
Crush juniper berries with the back of a spoon and add to the orange juice with salt and pepper.
Cover and leave to marinate for 5 hours.
Remove fillets and place under a preheated hot grill.
Cook for 10 to 15 minutes turning frequently and spooning over some of the orange marinade to prevent burning.
Strain remaining orange marinade and pour into a saucepan.
Bring to the boil and boil briskly to reduce liquid.
Place pork on a heated serving dish and pour the orange sauce over.
