| PORK VINDALOO RECIPE |
Pork Vindaloo
Pork Vindaloo (Serves 4)
Ingredients:
1/2 tsp. cardamom seeds
1/2 tsp. ground cloves
1/2 tsp. ground ginger
1 tbsp. ground coriander
2 tsp. ground turmeric
4 tsp. chilli powder
1 tsp. ground cumin
1 tsp. salt
1/2 tsp freshly ground black pepper
200ml. vinegar
450g. bonedlean pork cut into cubes
50g. polyunsaturated margarine
5 cloves garlic
Method:
Mix a little of the vinegar with the spices and seasonings into a thick paste and spread over the pork.
In a heavy frying pan melt the margarine, add the garlic and saute' for about 2 mins, stirring continuously.
Add the pork and the remaining vinegar.
Bring to the boil, lower the heat, cover and simmer for about 1 hour or until the meat is tender. Serve hot.
