| BAKED POTATO AND ONION RECIPE
Baked Potato and Onion Layer
Baked Potato and Onion Layer (Serves 4)
4 medium sized potatoes, sliced finely
4 medium sized onions, sliced finely
salt and freshly ground black pepper
1 clove garlic, crushed
1 - 2 tsp chopped fresh sage or half to one tsp. dried sage
175ml skimmed milk
Arrange the potato and onion slices in alternate layers in a shallow ovenproof dish, sprinkling salt, pepper, garlic
and sage between each layer.
Pour over the skimmed milk till it comes about two-thirds of the way up the sides of the dish.
Cover and bake in a preheated moderately hot oven (200C, 400F, Gas Mark 6) for about 50 mins or until the potatoes
Uncover to allow the top to brown, then cook for a further 10 mins.
If the dish starts to dry during cooking, add a little more milk, but the finished dish must absorb all the milk.
