| SPICY BEAN PASTE RECIPE
Spicy Bean Paste (Bigilla)
Spicy Bean Paste (Bigilla) (Serves 4-8)
1/2 kilo dried broad beans
1/2 cup olive oil
1 small hote red pepper
8 cloves garlic
a handful parsley
some fresh mint leaves and marjoram
Soak the beans for 24 hours, changing the water at least 3 times.
Boil the beans in fresh water for one and a half hours.
Drain off any excess liquid and mash or liquidize the beans.
Add the olive oil, lemon juice, crushed red pepper, chopped garlic, parsley herbs and salt.
This puree can now be served hot or cold as a snack on fresh bread or as a dip.
