| STUFFED EGGS RECIPE |
Stuffed Eggs
Stuffed Eggs (Serves 8)
Ingredients:
8 hardboiled eggs
1 large anchovy fillet tin
1 tablespoon capers
6 tablespoons olive oil
2 table spoons lemon juice
mustard
black pepper
lettuce leaves to decorate
some parsley
Method:
Hardboil the eggs.
Half the eggs lenghtwise and mash the yolks.
Add the ingredients to the mixture and continue mashing.
Fill the yolks with the mixture and place on the lettuce leaves.
Optional: add a twig of parsley on the egg.
